Easy Peasy Cheesecake
1 14oz can sweetened condensed milk (NOT evaporated)
1 8oz block of cream cheese
1/3 cup lemon juice
1 tsp vanilla
graham cracker crust
Cream together cream cheese and condensed milk. Add vanilla & lemon juice and beat until smooth. Pour into crust and chill for at least one hour, longer if possible. May be topped with fresh fruit, or canned fruit pie filling and whipped cream.

This recipe barely makes the one hour chill time at my house, and then only under threats of painful death! Sorry it is not so low sugar but I know you can get fat free condensed milk so maybe sugar free is available.

In the past I had some luck using flax gel for meatballs...it depends on the taste.  My guess is it might work here.  Flax gel does have an off taste so the meatballs must have strong flavors...these seem like they will.  It also can seem greasy so I'd suggest making 2 eggs worth and perhaps adding a bit more stuffing.  You might have to play with this.

For other flavor profiles, I had great luck using tomato paste to help hold meatballs together.

Try googling vegan spinach balls, and maybe you can find similar recipe or ideas to apply to the one above?  With 3 eggs, they are giving it some fluff factor not just glue.  The bread *may* be enough glue, but they would be quite dense.  How about doing the bread and spinach mix and stuffing it into mushrooms?  Then, it does not have to stay in a ball shape and would sit int he cap, as a stuffing?  if you like and can have mushrooms.
