Space ananda, I made your recipe, and it was a hit!  I love the flavors.  I made some adjustments, omitted the leeks, because I can't eat them, used twice as much mushroom as it called for, a little extra garlic, and no crumb topping.  But oh, it was so tasty!  Thanks!

The recipe is above, mostly.  I didn't want to type it out.  The book ingredients stop at fresh black pepper and instructions end before preheating the oven. I have never made the bread crumb topping on mine... It is an option in the book.

Hedge - do you want to try the beans in tomato sauce recipe? It isn't what most people think.

Or chickpea broccoli casserole? Or rice and bean filled zucchini? White beans and mushrooms (the recipe also has celery, carrot, onion, and leek)?

Definitely not looking for roasted squash or other veggies.  I do those anyway.     ;D I thought a bean bean dish would round those out nicely. Thinking along the lines of beans and greens, or something like that.

If you aren't set on one thing or another, go to the library and check out these books:
Veganomicon
The Kind Diet
Eat Clean Live Well

They are all loaded with yummy dishes. 

One of our favourite fall/winter dishes is a curried pot pie in Eat Clean Live Well.  Any sort of vegetable pot pie would be perfect for Thanksgiving.  The Tofu Turkey thing (cannot remember it's official title right now) in The Kind Diet is pretty festive - I make the stuffing and eat it on its own because it's delicious, but the tofu part takes a while to make. 

I also made some baked beans last night that were pretty delicious.  Just an ordinary baked beans recipe, only I didn't add the bacon.  I have another more European recipe of large white beans baked in tomatoes.  It's light and refreshing and lovely.

Roasted root vegetables (tossed in balsamic vinegar, olive oil, salt, and pepper before baking) is also high on our favourites list.  Then again, that list probably has a hundred different recipes on it.

A baked acorn squash. I've put some recipes in the squash thread from Moosewooed that I think are vegan.

We do sweet potatoes and Granny Smiths.

All of our dishes are vegetarian but most could be vegan. I'll think on it.

For thanksgiving, I would like to do a side dish, for most of us, that can be a main dish for my vegan mother.  I don't want want a soup, but something that can go on the plate along with the other sides for her, along with the turkey for us carnivores.  Ideally something that can be made ahead, then heated for dinner.  Whenever I do a google search, somehow "vegan" does not count.  Lots of vegetarian dishes with cheese, etc.  come up, as well as a few with meat. 

Any suggestions?
