I usually make my own Blintzes, but there was absolutely no way that was happening today.  I used Golden Frozen Cheese blintzes for this - the last time I called (which admittedly was a long time ago) they were safe.  You could certainly use a fruit blintz for this as well.

10-12 frozen blintzes, partially defrosted
1 cup sour cream
1/4 cup sugar
1/4 cup OJ
4 beaten eggs
2 Tbsp. melted butter
2 tsp. vanilla extract
1/8 tsp. salt
Sprinkle of cinnamon for the top

1 - Preheat oven to 350.
2 - Place blintzes in a 13 X 9 pan.
3 - In a bowl mix the sour cream, sugar, OJ, eggs, butter, salt and vanilla.  Pour mixture over blintzes.
4 - Sprinkle with cinnamon.
5 - Bake uncovered @ 350 for 45 minutes until puffy and golden on top.  SErve with additional sour cream on the side if desired.
6 - Head straight to ER for bypass from all the cheese and sour cream, LOL.  This is clearly not a diet-friendly snack!  ;)

My aunt used to add grated orange peel and a little Grand Marnier.  Amazing.
