Made these tonight, too. Going to a pool party tomorrow.  Hosts cooking protein, providing beverages, guests bringing sides and sweets.  Nut free, not egg or dairy free.

Key Lime is younger DS's favorite!  I love the idea of making mini's. I'll have two try these the next time he's home.

No.  Those are mini key lime cheesecakes, not key lime pies.  Still sound good, but a different thing. 

BTW, actual key lime pie has one less ingredient., even though the blogger boasts how few ingredients this key lime cheesecake has. It has key lime juice, sweetened condensed milk, and egg yolks.  I don't have my recipe where I am, so I cannot give amounts. 

Sometime I will try my recipe in mini version.  Or maybe this one, but I will call it what it is

Not exactly cheesecake.  The cheese is a very small amount, only 4 ounces, for cheesecake and all the other ingredients are essentially the key lime pie proportions I have used before.  My Key Lime Pie has a bit of sour cream in it, I think.  But the most common recipes are just the lime juice, egg yolks and sweetened condensed milk.    Different recipes use different quantities of juice and yolks, I have found.  These also baked much longer than a larger Key Lime Pie traditionally bakes.

Yes HH, you are correct. I use only condensed milk, key lime juice and egg yolk. But I would still try those in muffin tins. Great idea.

For the truly lazy or time-challenged, Keebler makes individual sized graham tart cups. I have some in my pantry.

We used those mini Keebler graham crusts to make mini key lime pies this past Easter. It was a good size.
