We did the chili lime chicken again this week...so we could have chicken soft tacos, great meal when everyone eats at different times.  DH also made his beef bone broth...house still smelled gross but it was for less time than when he uses the crock pot.

bought the stuff last night to make a double batch of chili lime chicken
also got a whole bird and a chuck roast
no school this week  so I want to have yummy food on hand for DS and if he has buddies over

mmmmmmm......chili lime chicken was yummy!

I made Mexican green rice to go with it and we had it with cheese in burrito wrappers warmed in a pan

so good

thats all I made today - but man it was good

DS declared that the chili lime chicken made the best chicken tacos ever.  And he usually turns his nose up when we tell him we are having chicken for dinner.

So you really not use any liquid for the Chili Lime chicken?

Just the lime juice, there is plenty of liquid once done cooking.

I've done chicken tenderloins with no liquid before. There is enough water in the chicken.

Marinating the chicken on seasonings now, will cook later.  Putting up a pot of black bean soup.

I made chicken soup last night from scratch - organic whole chicken - but I NOT USE THE INSTANT POT!
